Recipe: Paleo banana bread - yum!
I was asked recently if I had a good gluten free Banana Bread recipe. My answer was ‘Yes! I do’ - or actually I know of a really good recipe, but it’s not mine.
It’s in the Better Breads recipe book.
In fact it was the last recipe I tried from the Better Breads book before switching to a low copper diet (which means no nuts or nut flours… 😥 ) and I even took a photo of my banana bread because I was going to write about it. I just hadn’t got there yet.
This banana bread is really, seriously good. Mine turned out moist, banana-ry, nutty (I used pecan nuts in it) and the only problem with it was that it didn’t last long enough!

Now my first instinct was to just dive in and share the recipe for this delicious banana bread. But I think if I keep sharing recipes from the Better Breads book, I’m going to get into trouble! So I decided instead, to just share part of the recipe and I’m hoping they won’t mind as long as I point you to their website…
So below is a screenshot of the ingredient list just to give you a taste of what’s in it. However I’m afraid that if you want the rest of the instructions for this recipe, you’ll need to grab your own copy. (Sorry to leave you hanging, but I think that because I already shared their Paleo Pullman Bread recipe, I’d better not push my luck…).
You’ll see from looking at the ingredient list above that this banana bread recipe is gluten free, dairy free, yeast free, paleo friendly and low carb!
It’s awesomely good. Cross my heart… 🙂
