Seriously the BEST paleo bread recipes: Low carb & gluten free!
Woohoo! I’ve hit the jackpot and I’m in heaven…. 🙂
After what seems like a lifetime (a few years) of no bread at all, I’m more than happy to be able to announce that I’m back eating bread again!
But what I’m eating is not your average bread.
This is low carb, paleo friendly, no grain bread.
What’s happened is that I’ve found the best, and I mean seriously the best, low carb, paleo bread recipe book with amazing recipes that work!
Yay! 🙂
How I found this awesome recipe book
How it came about was that I was looking through an email account that I don’t use much any more for an old message and I spotted an email with a recipe for a paleo friendly bread.
It caught my eye for some reason even though it wasn’t what I was looking for, and so I read the ingredients just out of interest. I realised with some delight that I could actually eat this bread now that I’m able to eat eggs again (a recent and pleasant discovery - it seems that a lot of my food sensitivities are clearing up due to a number of factors, not the least of which is my treatment with high dose supplements for Pyrrole Disorder).
And so I clicked through to the website (here) from the email. I had a quick look at the information on the website and promptly bought myself a copy.
To be honest, I was a little skeptical at first. I’ve tried lots of bad gluten free bread recipes in the past and I wasn’t convinced that these paleo, low carb breads would be good. But for the small cost of $14 for the recipe book, I figured it was worth the risk.
And it was a risk well taken because the recipe book is amazing. There’s tons of info and tips about the different ingredients and how to get the best results, as well as a really good variety of recipes including:
- Coconut cream bread
- Better banana bread
- Paleo pullman bread
- Paleo corn bread
- Zucchini panini bread
- Paleo french bread
- “No rolls” Dinner rolls
- Chewy paleo breadsticks and pretzels
- Paleo pita pockets
- and more….
There’s also scones, muffins, tortillas, bagels and burger buns!
Plus, when you buy the Better Breads recipe book, you get another two recipe books for free that have breakfast ideas and ‘crusts, crackers and crisps’. These two books have all manner of deliciousness within, from pancakes to pizza!
One of the best things that I loved about this book straight away was that they’ve gone to the trouble of including the nutritional information for each recipe. That means that if you’re on a low carb diet like me, you know exactly how many carbs are in each bread, and amazingly, most of them are really, really low.
Brilliant!
My first loaf of Paleo Pullman Bread
So I made my first loaf. Quite amazingly, when I was mixing the mixture in the bowl, it had a bready smell and I’m not sure why…
Anyway, I mixed it all together, baked it and then I took it from the oven and let it cool down.
Once cool, I cut a slice and cautiously took a bite.
Now. I was really not expecting what came next!
Honestly? I was expecting something that was dry and maybe okay if I was lucky.
But it was great! I mean seriously great. This bread has great texture and great taste. It’s not crumbly or anything!
Amazed I was….
And so the next day I made another loaf of Paleo Pullman because we demolished the first one quick smart! Except I made a double batch this time because the loaf was too small for my tin and so the first one was quite shallow.
Doubling it gave the same perfect results, with the same cooking time, but a larger loaf. Perfect!
