I whipped up these spicy, gluten free biscuits yesterday and they’re made from buckwheat, tapioca and coconut flours. They’re low copper, gluten free, grain free and they’re good!
Since realising that I had to change to a low copper diet, this following recipe has become my staple, almost every day breakfast. It’s friggin’ good! It’s a stir fry, made with Kangkong (also known as water spinach), spring onion and whiting.
Switching to a Paleo diet doesn’t have to be difficult and planning meals can help. I’ve put together a simple single day paleo meal plan just to show how easy it can be and how tasty the meals can be as well!
I recently realised that I need to limit my copper intake because of the whole Zinc/Copper ratio thing that can be such a big part of Pyrrole disorder. So there goes the nuts and seeds - except pumpkin seeds and roasted, they’re awesome!
