So, I’m sitting here at my desk yesterday, it’s late morning, I’m starving and trying to decide what to have for lunch. Hmmmmmm…… I really felt like pancakes or muffins or something light and fluffy and carb-ish so I put my thinking cap on and came up with this grain free blueberry pancake recipe that’s just like the real thing!

I found and fell in love with a new vegetable recently. It’s commonly known as Kangkong. I’ve seen it at the markets and in Asian grocers, but I’ve never actually tried it - until recently that is.
