Instant Custard | Dairy and Egg Free, No Cooking

This super-quick custard recipe is not only really fast and easy to make, but it’s dairy free, gluten free, egg free and a fairly healthy alternative to traditional custards.

This light and surprisingly delicate custard contains some strange ingredients, not the least of which is avocado and I know what you’re thinking… But trust me. It’s good!

The best thing about this delicious custard alternative is that this is a real spur of the moment dessert. In fact from the thought that goes “Yum…. I feel like custard” to tucking in takes about two minutes!

What you’ll need…

1 cup coconut milk (if a little thick, add a 1/4 cup of water)

About 1/4 of a large avocado (or 1/2  a small one)

2 teaspoons of lemon juice

2 teaspoons coconut sugar (could be replaced with honey or maple syrup)

2 teaspoons vanilla extract

8 drops of Vanilla Creme stevia

A bullet style blender

The How To

Put all the ingredients into your blender and blend for about 30 – 60 seconds. That’s it!

I told you it was quick and easy…  😛 

This recipe makes two servings.

A note about those bullet blenders…

I must admit that I was a little skeptical about the popularity of these little blenders (like the one pictured above).  The first one I saw was on an infomercial on TV. I think it was the Magic Bullet and like everything on TV infomercials, it looked amazing! But like everything on TV informercials, the amazing-ness is often exaggerated and so I took it all with a grain of salt.

But what I noticed next was that there seemed to be a thousand different models and brands of these things!

My thoughts were “Really? Are they worth owning? Or are they just another kitchen gadget that clogs up your cupboards and benches?…”

Well. I used one at my Son’s house and it was great for making smoothies. Good oh.

I’m slightly interested now…

Then I found one at Christmas time in a really good sale. It was like 60% off or something so I bought it.

And guess what? I LOVE it!

This is one kitchen appliance I wouldn’t want to be without now. It takes pride of place on my bench top, plugged in permanently and my big blender has been relegated to the cupboard.

Now I understand that if you don’t own one you might be asking why…

Well! Where do I start? It is just sooooo easy and does such a fast and amazing job of things. I use it to make not only smoothies, but sauces, dressings and of course custards! It can also be used to grind coffee beans, chop nuts and lots more.

And then you just rinse it out. Easy-to-clean folks. (That’s me spelling it out to emphasize 🙂 ) That’s a huge plus.
